The Umami Tsunami

Umami is one of the 5 taste categories (along with sweet, salty, bitter, and sour). It is a Japanese word meaning "pleasant savory taste" and it can be found in many different foods that contain a high level of glutamate. Some of these foods are mushrooms, cheese, smoked meats, cooked vegetables, and soy sauce. For us to be able to give the Umami Tsunami its name, we really needed to amp up the umami flavor with the toppings we chose. Our umami ketchup starts with fire roasted tomatoes, then we blend in caramelized oniona, soy sauce, oyster sauce, Worcestershire sauce, and some other secret ingredients. Then we let is simmer for hours to thicken into an amazing sauce that pairs perfectly with the smoked Gouda, Benton's bacon, and Marsala wine sautéed portabella mushrooms on the burger. It truely is a wave of flavor that everyone needs to experience.
